Sorry, I think I understand now, but you can still confirm if that's really what you meant.
By default the Demo and Admin users are created with the same 'Address', and because the Email is part of the address, when you change one it changes the other.

If you create new users you should not have any issue.

Thanks for reporting, we should probably split the address of the Admin
and Demo user.
