Hello Marco Dieckhoff,
          By default export data form open with import compatible filed list. 
for project.project object field state is not import compatible field so it's not display in export list
If you want all field list just uncheck  Import compatible checkbox.
correct me if i missing something

  [Stable 6.0.2]No CSV Export for delegation inherited fields

Status in OpenERP GTK Client:
  Invalid

Bug description:
  The export to csv function of the gtk client does not show fields from
  _inherits objects.

  E.g. when exporting projects, the analytic account is an delegation inheritance:
      _inherits = {'account.analytic.account': "analytic_account_id"}

  These fields, including important ones like state or partner_id, are
  not presented in the CSV export wizard.
