Hi,
about the first problem, what about running the dock with: cairo-dock -e
gnome ?
about the 2nd, it would be nice to run the dock with gdb: gdb cairo-dock
then when it crashes, it will stop and you can see where it crashes exactly
(please see our wiki for more details on using gdb).
