After some more digging around.

In /usr/share/applications/
I have three deja-dup desktop files. !?!
One of which will display the progress bar whilst backing up if locked to the launcher. 
The other two will load up the deja-dup preferences window if clicked and if backup is run from the preference window DO NOT display the progress bar.

>From my dash, one of the non-progress bar desktop files is found, if
this is locked to the launcher, no progress bar is displayed during
backup.

Not sure if this is universal or something peculiar to my system.
