Colin,

As far as I know, gnome-shell is a self-contained window manager now. So
that's why it works without mutter. And compiz is not used by Gnome
Shell at all (but compiz is used if you log in to "Gnome Classic").

This sounds like an issue with the nouveau driver now. Are you able to install and test the proprietary NVIDIA driver?
  1. Super+A to search applications
  2. Type: Additional Drivers
  3. Does it give you any option to install a proprietary nvidia driver?
