Hello
In fact you need to install the product_variant_ multi module to activate
this feature. The community perfected this module since 2008 to now and
it's very mature now (also used for dynamic BOMs or in magentoerpconnect).
May be what you mean is that some variant / group field would better be
removed in the STD distribution to avoid confusing users with features
unavailable in the STD distribution.

Notice that product_variant_multi could also be merged in the addons. But
IMHO in that case license and copyrights have to be made very clear because
it absolutely contains large parts of code ( from us and others) that have
no special pay-me-a-beer derrogation clause to the strict AGPL license as
OpenERP SA now put in the core. I mean people using this module should be
entirely strictly running strict AGPL. Else it's a very dangerous slope...
