It sounds like you need to /remove/ 'plymouth.use-simpledrm' and keep
the virtio GPU driver in initrd.

If simpledrm isn't working then that might mean it is missing one of the
"simple" backends it needs (sysfb in the kernel source, IIRC).

Bug description:
  On a riscv64 virtual machine with Xubuntu desktop on Ubuntu 25.10
  there is no graphical output from plymouth.
