It is really a hidden feature of Evince. Not easy to discover how to
open the embedded documents.

Title:
Document asks for Adobe Reader X
Status in evince package in Ubuntu:
New
Bug description:
I try to open a PDF portfolio with evince and it advises me to
download Adobe Reader X.
It took me some time to figure out I have to click on the side pane
dropbox and choose "Attached files" to be able to see the contents of
the PDF portfolio.
How about displaying these files at start?
