I just tested this in lucid and the default is 2, not forever.
Reopening.

Bug description:
  Binary package hint: evolution

  I think it is safe to assume that most recurring calendar entries
  don't have a fixed end date.  Thus, I suggest to make "forever" the
  default when entering a recurring appointment instead of the current
  "for 1 occurences"
