Confirmed this has been fixed Since Sep 30, 2011 (empathy
3.2.0-0ubuntu1) in Oneiric.

Bug description:
empathy shows a warning for servers with a self-signed certificate.
There's a checkbox remember the user's decission which doesn't seem
to have any effect. After every reconnect it shows up again.
This problem occurs on all ubuntu system I know (also on maverick
meerkat and lucid lynx).
