Thank you for your bug report, that behaviour can be confusing but is
not a bug, the default player define what will be started by the unity
homescreen and by the media key, not what application will be associated
to formats in the filemanager (you could associate different players to
mp3 and ogg files there)

  Unity - Gnome control center doesn't allow to change default apps

Status in “gnome-control-center” package in Ubuntu:
  Invalid

Bug description:
  Tried to change my default audio player from banshee to VLC, via
  gnome-control-center, with no success: system player seems changed but
  it isn't so. Tried to do the same with "open with" trick and
  succeeded, but my player opens a new instance for every audiofile I
  play.
