Thank you for your bug report, the unity left bar is just a launcher
with your custom icon, the mailer is installed by default (you were
getting evolution in natty and now thunderbird in oneiric), you can
click on the ubuntu logo, open the application lens and drag&drop
evolution (or any other icon) to the launcher if you want to add your
own launcher icons

Bug description:
  I'm testing evolution on oneiric to see if I can upgrade from
  maverick.  After the installation I unistalled thunderbird and
  installed Evolution.  Yet now the mail icon in Unity menu bar merely
  contains the status entries, chat, microblogging, Ubuntu One and a
  reset entry.  I believe when I tested Natty evolution did actually
  show up.  I installed Evolution from the Software Center, and found no
  other addon for untiy integration, so I suppose it should be there by
  default or is something missing in the Software-Center configuration?
