I do not reproduce on LibreOffice 3.4.4 x86_64 with FR langpack (vanilla version) under Ubuntu 10.04. 
Please try again with the current release.

  click Sheet2 -> double click graph -> click bar -> Format -> Data
  Ranges... and one may edit the data ranges.
