I see. I can play quicktime videos on Ubuntu 11.10 just fine with totem, so it seems not to be a general issue.
I saw that you already reported a bug against totem, I'm therefore marking this bug here as  a duplicate (if totem can play it, nautilus will also display the properties info). Let's continue in bug #922069

  no audio/video info in Properties for mov files

Status in “nautilus” package in Ubuntu:
  Incomplete

Bug description:
  Right-click on a quicktime video file (.mov) in Nautilus and choose "properties".
  Select the "Audio/Video" tab

  The "Audio" section shows "N/A" or null values, and there's no "Video"
  section at all. See first screenshot.

  Gnome MPlayer can play the file and shows all the correct audio/video
  information in Details (see second screenshot)
