Hi, 
the issue is not that it doesn’t allow custom sorting (I didn’t know that was possible), but that it sorts options alphabetically rather than using the sort order specified for the option set.

On the /demo for example, the option set for Gender has sort order Male - Female, but in ER and EV they are displayed as Female - Male. Not so important in the case of Gender, but if you have options like «Not applicable» or «Other» you might want to have those at the end of the list both in data entry and in analysis by default.
