I have observed cases where I enter data for a month, switch to another month or orgunit, and then go back. Nothing then shows up, even though the data is there in the database. It is very strange...perhaps something to do with the caching?

Remember DHIS2 aggregates at any level for OUs below. Are you aggregating at a higher level or?

If you are, you need to check on the Ordunits below. Also if a dataset was assigned to an Org Units and removed after data entry, data will still be available for analysis.
