Hello Gerald.
I have done that before, you only need to set up different databases on postgresql (Naming them differently) then creating dhis2 instances with the same names you used in the database., this is done by renaming the war file before exploding in tomcat. Set the database connection in the .conf Files then environmental variables. You should be good to go.
