Two comments:
(1) You can use a variational problem directly for solving nonlinear problems with non-homogeneous boundary conditions. No need to subclass NonlinearSolver etc.
(2) For Stokes, if you prescribe the velocity on the entire boundary (as you seem to do above), you do not have a unique solution for the pressure. This can easily lead to convergence problems.
