Public bug reported:

One of Edubuntu's goals is to make GNOME as easy as possible for
students and teachers alike. One of those things is using GNOME Online
Accounts (GOA) to subscribe to email, calendars, and contacts.

Unfortunately, in LP: #2122443, Microsoft 365 (formerly Outlook)
accounts no longer work in Geary. Geary is seeded in Edubuntu to provide
that simplicity for email.

The best resolution for this would be to replace Geary with Evolution,
or add Evolution, at least for this release, as it's unlikely Geary will
be fixed in time for beta freeze. Evolution supports the entire stack of
mail, calendars, contacts, and tasks.
