Curt Kersey gave more information on the question:
I just pulled the most recent version of carbon, whisper, and graphite-
web, and I updated my testing server with that version to see if this
problem was resolved.  After updating and testing, I find the same
behavior -- with no new metrics received for the last 7 days, a
sumSeries() on the metrics will return an empty response from Graphite.
If I run a 'find' command and 'touch' each file, then it works --
Graphite returns a bunch of "None" values for the last 7 days.

Will keep testing ...
