Sorry for the delay in replying, Andrew.

Can you try to replace enblend and enfuse in your hugin binary folder
(probably C:\program files\hugin) with
http://sourceforge.net/projects/enblend/files/enblend-enfuse/enblend-
enfuse-4.0/enblend-enfuse-4.0-win32-nosse.zip/download

and run the stitch again without the /onecpu switch?

 At this point I don't have much explanation other than you might be
experiencing the same threading issue that has revealed itself to users
of OS X 10.7 Lion.  Using the above binaries is a similar remedy.  If it
works, it will confirm an issue with OpenMP and Enblend.

I will be gone / in hiatus for a few months soon, but others may pick up
on your reports.  sorry.
