Happens with OS X 10.9.5 too.

I never figured out before why I sometimes couldn't change the
projection.

A bug. Clicking on the pop-up menu moves focus there. Focus shouldn't
have to be "nowhere" in order for the menu to work. The same thing also
happens on the Stitcher tab.

Note however that the Guides menu in the same window doesn't care about
the fov field.
