I think the first error image is enough:
caught exception: image <snip>- FedEx Scan 2019-07-06_16-07-28(2).jpg has 3 channels, while <snip> FedEx Scan 2019-07-06_16-07-28(1).jpg uses: 1

Also Hugin itself refuses to add RGB and grayscale images to the same project. So I don't know how you could achieve this from the GUI.

Bug description:
  After using Hugin (2019.0.0) to align, rotate, and crop a matched pair
  of images, I ran HuginStitchProject manually to generate a TIFF file
  (running it from within Hugin gets a parsing error).
  HuginStitchProject occasionally encounters an error when remapping the
  LDR images. Usually a rerun is successful, but this time it wasn't, so
  I thought it was worth reporting.let me know if you need more data.

  Since bug reports can have only one attached file, I catenated the
  error log file and the PTO file.
