One of the SPOF's we have at the moment is poppy: we have a single
instance of both the FTP and SFTP servers.

Are any code changes needed to support having two instances of both
(behind a load balancer, so clients won't know about them).

Or is it just creating one/two new configs in production and deploying
another copy running that config?

I am assuming, given that we run a separate SFTP and FTP process, that
there aren't any concurrency issues around the task being performed.
