The collection and the page are both ticked when you are on the "Share"
screen because they share the access permissions. Taking the page out of
the collection doesn't automatically take its access away.

You can untick the collection if you only want to change the permissions
of the page.

Bug description:
  I'm not sure if this is a bug exactly, it may be by design.  Since we
  upgraded to 1.6, we find that, if you remove a page from a collection
  and then try to share that page - on the 'Share' page, the appropriate
  collection is ticked for sharing as well as the single page, even
  although the page is no longer part of the collection.
