sounds exciting! you're saying you want to test how Ubuntu as an entity performs when humans try to solve everyday problems with it, right?
Results from such testing, if well documented, can lead to great ideas the way i see it, e.g.: a simple procedure that involves actions in both Gimp and Shotwell a suggestion for how the procedure could be facilitated
a little window management help via compiz a new "Desktop Feature" for the next cycle ;)
looks pretty helpful to me, for what it's worth.. i think such testing is best practised with a clearly stated goal or a problem:
"cropping images is too difficult in ubuntu" or "to import and crop a photo within seconds"
the documentation can happen in a how-to for example, or a simple user story.. you name it..
