I am not a programmer yet and perhaps I am missing a "how" on this.
My experience as a user ist that you cannot easily. What have done is canceled the order in OpenERP then edited the order (to create a new one) in Magento. You can then specify new "payment" "shipping" and "products".
I agree, it would be nice to be able to change any of these items on the back side. Even the shipping price would be nice to change.
When working with a customer interactively, ie on the phone and email, often it is easiest just to create the customer in Magento but then process OpenERP orders. What is lost with this approach is the ability to get the customer to enter their Credit Card securely online (phone works but would be best to send a Quote and have them respond with a payment). Can do this w/ PayPal now but need other gateway connections.
Some of the constraints blocking change are in the Connectors reference to Magento (openerp controls) and they in turn are related to Magento's quite rigid fixing of orders. The editing of orders in Magento does work (you need the card number again generally which is problematic). It does cause synch issues w/ OpenERP but I have gotten past them. Need to notate the process to myself as it did not seem easy.
