This behavior is designed in the project_issue addons (kanban view)

I guess what you want is something like that :
                        <t t-set="color" t-value="kanban_color(record.color.raw_value === false ?  record.state.raw_value : record.color.raw_value)"/>

but I'll let the addons team decide if this is the excpected behavior

  Step to reproduce:

  in project issue kanban view select any one issue and try to change
  the colour other than white and then again change to white it display
  default colour of that issue .
