I have checked your issue at my end,

But I didn't faced any problem, and when you changed the products tax
after sold it. It doesn't affect on sale order as well as account entry.

So would you please elaborate more information on this.

  Point of sale amout tax field after change product taxes

Bug description:
  Hello,

  OpenERP 6.0.3.

  If you change the sales taxes of one product after doing a sale with
  point of sale, the amount_tax field show the actual tax, and not the
  tax when the product was sold.

  All the account move are correct.
