Do you mean in the selection in the first time wizard? 
Those themes are just really examples, users can just add their own theme in the Theme Manager. We're never going to find examples that fit everyone's scenario. 

Although saying that, I agree, it might be good to offer a couple of
plain ones.

Bug description:
  I would appreciate if in openlp there could be added another theme
  which would be more usable in a smaller setup.

  A theme with the following or similar characteristic:
  - black background
  - white text
  - lyrics aligned in the middle of the screen
  - the font size would be as big as the screen would allow
