Just noticed that you wrote: "The issue may be related to me trying to change the location of my services from my images folder to the servicemanager folder." 
This is indeed the issue. You should not place files or edit files inside the openlp data-folder, or you'll risk data-loss, as you have experienced. Place your service.files anywhere else, and you won't have problems.

  Saved Services deleted on opening openlp

Status in OpenLP - Worship Presentation Software:
  Invalid

Bug description:
  Each time I save a service and close OpenLP, when I open up OpenLP the
  saved service is nowhere to be found.  I now store copies of the
  service in multiple locations to make sure I have my work saved.  I
  have also lost all my previous services.  The issue may be related to
  me trying to change the location of my services from my images folder
  to the servicemanager folder.

  I am using OpenLP 2.05 Portable on Windows 8.1.
