Michael Findlay confirmed that the question is solved:
It looks like it wasn't a path problem/Sikuli's fault after all. I
managed to get things running through Eclipse so I could get a look at
the exception it throws when it crashed (it kept disappearing so fast I
never got a chance to read) and it can't find an image file.
