RaiMan proposed the following answer:
There is a bug in the current Sikuli version using Java:
the Screen class must be instantiated before the App class is used.

easiest workaround:

import org.junit.Test;
import org.sikuli.script.*;

public class MacTest
{
    @Test
    public void testMacTest()
    {
        new Screen();
        App.open("Firefox");
    }
}
