RaiMan proposed the following answer:
1) release date
I will try to finish some vital changes before christmas and then freeze this as version 1.1.0. (github master)
Then I will switch to develop version 1.2

2) the installer will be running without the need to go to the command
line for that.

3) Since I do not know how stable Jython 2.7 really is, I am planning to
have an option, to select between 2.5 and 2.7

Next week I will start with 1.1-Beta1 with weekly followups towards
release, this will contain 2.7
