you should upgrade to version 1.0.1 (setup option 4), if this is
possible for you.

Generally the Sikuli stuff should be kept in one place and not moved
around.

In Eclipse use a reference to the sikuli-script.jar at its place in
/Applications/Sikuli-IDE.app/Contents/Java

If you want to pack fat jars for distribution containing all stuff, then
you should use version 1.0.1, which has the needed libraries in the jar
and exports these to a libs folder at runtime in the same folder as the
jar.

Furthermore 1.0.1 option 4 makes a sikuli-java.jar, that does not
contain the Jython runtime environment.

And things get even easier if you decide to use Maven.
