RaiMan proposed the following answer:
Since there is no Mac app for 1.1.0, you cannot "launch" SikuliX version
1.1.0 this way.

If you never had Sikuli/SikuliX on that system before, you have to start
with version 1.0.1, that has the Mac app, copy it to /Applications and
use it at least once (this activates the .sikuli bundle usage).

Then you might setup version 1.1.0 on the same system in parallel.

Then if you use the app, you use version 1.0.1.

If you double-click on sikulix.jar or use runsikulix in the version
1.1.0 setup folder, it is version 1.1.0 you are using.

Do not mix version 1.0.1 and 1.1.0 stuff in one folder.
