RaiMan proposed the following answer:
again tested:

- tesseract installed via homebrew
- this creates a symlink for libtesseract.dylib in /usr/local/lib

... and everything works

so check, wether there is an entry (real or symlink) for
libtesseract.dylib in  /usr/local/lib
