Ok, this is not a problem with Simple Scan, but rather an issue with
Thunderbird. Thunderbird is explicitly declining to accept attachments
via mailto: links. There is a workaround in xdg-utils (xdg-email is used
to send emails with the preferred mail client). I am closing this bug /
marking it as a duplicate of the relevant bug.

  Sending as email won't auto-attach

Bug description:
  When I try to select "Send as..." and then "Email", it opens up
  Thunderbird, but there is no attachment. This is counterproductive
  because one expects the document just scanned to be attached in the
  email, opposed to what's happening currently.
