Simon Holt proposed the following answer:
My understanding is that the EFI partition is used simply to cache the
BIOS to allow faster boot (you need to enable the "Boot Booster" option
in you BIOS). The partition can be removed if you're not particularly
bothered about shaving a few seconds off your boot time, in which case
the menu option in the BIOS will vanish. It shouldn't have any other
effects.
