Hi. 
have a look in the preferences folder, the 'sessions' program.
the nice launcher can be removed by disabling the "UME Desktop launcher"
the automatic maximisation can be removed by disabling "Maximus"

both may be bound to hotkeys in order to switch back and forth without
hassle.

PS : I'm french, so i'm not sure what labels are used on EN versions. the french labels are : 
'Preferences'  folder
  -> 'Sessions' program (title when opened = "Préférences des sessions")
       *the desktop is called "Lanceur de bureau UME"
       *Maximus is called ... Maximus.
