You can check this site for a preliminary count:

  http://screenshots.ubuntu-manual.org/

Note that the screenshots haven't been proofread yet (checked for
consistency and correctness), so some may need to be retaken.  If you
run Quickshot, it will download the list of screenshots still needed
for the current language.
