In the QtCreator after you have opened your project and go to the 
Publish page there is an Excludes tab. There you can list the files or 
directories you want to exclude from the packaging.

In more details how it is done behind the IDE please check the 
/usr/share/qtcreator/ubuntu/scripts/qtc_project_click_create script
