If you install terminal then open store and tweakgeek then go into tweakgeek and look for terminal turn of app susend that will give you ssh without suspend For vnc you will have to install libertine and the remmina which will give you vnc or rdp connections here is a small tutorial http://wayneward.co.uk/ubuntu-touch/ubuntu-m10-arrived/

As far as SSH goes, you're overthinking it!  :)

You have a full Linux computer with GNU userspace in your hand. Open the terminal and use the program 'ssh' just as you would on any other Ubuntu machine.

Do note that if you let the screen turn off or switch away to a different task, the terminal will suspend and your SSH session may time out (so byobu/tmux/screen on the RPi is a really good idea).

As for VNC, there's no native app, so you may have to use libertine-container-manager to create a chroot container and install a VNC client. But you're going to want a Bluetooth mouse and keyboard to use your VNC client.
