Thanks for your report! There are different reasons why those strings
are not shown translated.

* The "Color" string is a bug, and I have committed a fix for that:
  https://salsa.debian.org/gnome-team/gnome-control-center/-/commit/1ce60c52

* The "Ubuntu Desktop" string simply needs to be translated:
  https://translations.launchpad.net/ubuntu/lunar/+source/gnome-control-center/+pots/gnome-control-center-2.0/fr?search=ubuntu+desktop

But as regards the values in the Desktop Icons section, I don't know why
they are not shown translated. "Bottom Right", for instance, is indeed
translated into French:
