I upgraded to lucid (switched back to 32bits) and compiz stop crashing (tested for over a month now).
I don't know if it has something to do, but I didn't install package compiz-fusion-plugins-extra this time.

Currently using Lucid Lynx 10.04 32bits 2.6.32-22-generic, Compiz
1:0.8.4-0ubuntu15, NVIDIA Driver Version: 195.36.15
