Steven Danna proposed the following answer:
1) Start Evolution
2) Go to Edit->Preferences.  The preference dialog should open to the "Mail Accounts" section.
3) Select the account you want to edit from the right-side pane.
4) Press the "Edit" button.

The settings you want to change are likely to be on the "Receiving
Email" or "Sending Email" tabs.
