Posting a new question gets a whole bunch of people looking at the
question rather than just me and AP.  I'm completely clueless about the
fstab and steer clear of it whenever possible.

Your system is working up to a point and boots into the Ubuntu that's on
the hard-drive.  So now it's just a case of tidying a few things up -
even tho things don't look pretty they are ok.
