I re-double-checked and asked Remi today. There are three backups in two 
different buildings. With wikia mechanism, each backup contains the 
complete rollback (in addition to the rollbacks of the backup system 
itself).
Reminder : we could also dump the wiki from time to time and put the 
archive somewhere out of Grenoble, to be 200% sure.
