Is this energy increase timestep dependent? It can be the impact velocity is so high that the energy is created immediatly when the contact is detected (i.e. the initial overlap).
I would suggest you simplify the problem (less elements) and try to reproduce this energy increase. If it persists please send here the simplified scenario and I'll try to have a look.
