Two remarks:

- changing bodies' materials will affect the (e.g. stiffness) properties
of future interactions only, and leave existing interactions untouched.

- If we imagine interaction properties to be instantaneously changed, the normal force (at least) will instantaneously change. 
Since Fn = kn * un, Fn changes when kn instantaneously changes (while un does not change: your spheres stay at the same position during the change in material)
